Every cryptocurrency is a completely different form of money with different characteristics and monetary policies. Think of them as different currencies (e.g. USD, EUR, Venezuelan bolivar, etc.). Therefore we can't bulk them in the table as we are comparing different specific forms of money.
For example, USD are much more scarce than Venezuelan bolivars, and within cryptocurrencies Bitcoin, capped at 21M, is more scarce than Ethereum (estimated maximum supply at 100-120M).
These are not fungible because they are completely different assets. If today you give me 1 Ethereum in exchange for 1 Bitcoin, you will lose a lot of money (see exchange rates). Bitcoins are fungible with other Bitcoins and Ethereums with other Ethereums, but not fungible Bitcoin with Ethereums.
